Nothing makes a dinner party easier than having a low maintenance, “scoopable” dessert that is super simple to serve. This tiramisu is a massive crown pleaser and goes down and absolute treat every time. It is a slightly non-traditional recipe, using crème fraiche instead of mascarpone, but I feel like it adds such a delicious lightness with its very slight sourness that breaks through all of the decadence. You’re going to love it.
Cream layer:
Crème fraiche x 2 cups/500g
Egg yolks x 4
White sugar x 3/4 cup
Vanilla bean (if you can find otherwise vanilla essence is fine) x 2 tablespoons
Heavy whipping cream x 2 cups
Generous pinch of salt
Espresso biscuit layer:
2 packs of lady fingers biscuits
Strong coffee/espresso x 2 cups
Kahlua x 1/2 cup
To top:
good quality cocoa powder to sift over top
Method:
Place the egg yolks and sugar in a glass bowl over a pot of boiling water on the stove ( a double boiler) on low heat and whisk constantly until the sugar has dissolved slightly and the mixture has become silky and thickened. Do not allow the mixture to scramble. If it does, start again. This should take around 5 minutes.
Once you have tempered your yolks and sugar pour them into a bowl with the crème fraiche and mix together until fully combined.
In a separate bowl with an electric mixer, whisk your heavy cream and vanilla until it forms stiff peaks (whipped cream).
Then fold your whipped cream into the crème fraiche egg yolk mixture. Place in the fridge while you make your coffee mixture.
Combine the coffee and kahlua in a bowl and dip the lady fingers in quickly one by one before forming a neat layer of them in the bottom of your glass casserole dish. *Allow them to soak up a good level of coffee without completely falling apart and being too soggy, they should still keep their structure.
Then top the layer of dipped lady fingers with a generous layer of your vanilla cream mixture before topping that with another layer of dipped lady fingers. Repeat one last time ensuring the final layer is vanilla cream and not lady fingers.
Then dust generously with cocoa powder and place in the fridge to set for at least 2 hours, ideally overnight.
To serve scoop with a serving spoon onto a plate or bowl and top with some fresh raspberries or strawberries.
